Meet Executive Chef Scott Huggins
Scott Huggins is no stranger to the hospitality industry, with an inspiring international career spanning over 20 years. Melbourne-born, Scott refined his culinary expertise whilst working for several of the world’s best, high-end Michelin-starred restaurants in culinary destinations like Singapore, Spain and Japan.
With a passion for creating fresh, natural dishes, Scott brings his unique skill set to Penfolds Magill Estate Restaurant, offering delectable dining with Penfolds award-winning wine portfolio.
“After working in many international restaurants, I’ve learnt that there is a certain simplicity with what we do, in bringing complexity and technique to dishes in new and exciting ways,” says Scott Huggins.
“At Magill Estate Restaurant, I bring these unique elements to my dishes from the places I have worked around the world.”
Upon his return to Australia in 2013, Scott seized the opportunity to join the team at Penfolds Magill Estate Restaurant. His vision on continuing to build on the restaurant’s reputation was paramount, whilst drawing on his past experiences to blend his own unique ideas into the menu and the complete dining experience.
“We work around the ingredients available to us locally, sometimes something new and exciting will come in which we will then utilise on the menu, but each new season brings something different; different ingredients, different tastes, different flavours, which we can use to bring a dish to life,” says Scott.
The Penfolds ethos for sourcing the most superior fruit from each vintage is shared by the restaurant, where Scott employs similar methods to ensure only the very best local produce is sourced.
Scott works closely with local farmers and producers, including the team at Mayura Station Beef. Located on the limestone coast of South Australia, Mayura Station produces award-winning Wagyu beef. Scott’s inimitable relationship with the team at Mayura Station means certain cuts are hand picked and supplied exclusively to Scott and Magill Estate.
Driven and focused on achieving the un-conventional, Scott and the team continue to provide guests with the opportunity to experience the very finest dishes, featuring clean and natural ingredients, complex in preparation but never complicated on the plate or palette.
